Mandarinensoße

500 –700 g Mandarinen
20 g Ingwer fein gehackt
0,5 Tl Salz
5 Pfefferkörner gemörsert
1 Tl Kurkuma gem
2 El Balsamico Bianca ca
Tamari

Quetschkartoffeln

400 g Pellkartoffeln
Salz
Pfeffer
Muskatnuss frisch gerieben
1 El ungehärtete Margarine evtl mehr
Sojamilch, warme

2 x zwei Scheiben a 200 g Tofu in der dicke, nicht ganz durchschneiden, so das eine Tasche entsteht, mit Tamari übergießen und damit ca 30 min marinieren ca.,
in die jeweilige Tasche 1, 2 oder drei dünne Scheiben Räucherlachs legen, mit einer Kordel kreuzweise verbinden.
Buchweizenmehl mit gemörserten Pfeffer, Salz und Bio Sesamsaat vermi-schen, den gefüllten Tofu drin wenden, und im heißen Olivenöl braten.
Wer Ei verträgt, kann auch erst den gefüllten Tofu, in ein zerquirlten Ei wenden und dann in die Mehlpanade geben.

Mandarinensoße:

Mandarinen schälen und in einem hohen Becher mit einem elektrische Pü-rierstab pürieren.
In einen Topf mit Ingwer, Salz, Pfeffer und Kurkuma geben, 1 x aufko-chen, von der Hitze nehmen, mit Balsamico Bianca und Tamari ( Marinade ) pikant würzen.

Quetschkartoffeln:

Pellkartoffeln mit kaltem Wasser abschrecken, pellen, und mit Salz, Pfef-fer, Muskatnuss, 1 El ungehärtete Margarine evtl mehr, quetschen, und heiße Sojamilch dazu geben, dass das Ganze schön cremig wird.

Tofuschnitzel sowie Soße und Quetschkartoffeln zusammen servieren.
